The given diagram illustrates the structure of a home smokery and the process of making smoked food. Overall, the home smokery is composed of underground chambers connected by narrow pipes. The process involves three main stages, beginning with the intake of fresh air and ending with the smoking of food items in a container. In the initial stage, fresh air enters the first underground chamber through an open lid. The air is then directed through a narrow connecting pipe into the second chamber. Next, the process is fueled by stacked wooden logs that burned beneath a closed lid in order to create smoke. Afterwards, smoke is kept beneath ground level and continues to move to the third chamber by an upward-sloping pipe. Before entering, the hot smoke needs to pass through the bricks placed at the bottom of the box. Finally, the smoke rises into the box, which is situated above ground level, to cook and flavour the food, such as fish and meat, that are hung inside.
