Overall, the entire structure of a home smokery consists of three primary parts, namely an air chamber, a fire chamber, and a smokery box. These parts function together, beginning with the air entering the air chamber, going to the fire chamber to maintain combustion, and finally being channelled into the smoking box to preserve and flavour the food. To begin with, the air flows into the open-lidded chamber, which is connected to the closed-lidded chamber through a narrow conduit. After flowing to the fire chamber, the airflow supplies oxygen to the fueled logs and keeps the wood burning, which in turn generates smoke. This smoke, with no other escape route, is then forced to move through the pipe linked between the fire chamber and the semi-underground box. The smoke in the second chamber passes into the smoking box through an upward-sloping pipe before reaching the bricks, which are arranged to disperse the smoke. The smoke rises to the top of the third box, where various foods are hung. Ultimately, the food is smoked and has a distinctive flavour, allowing the food to be preserved for a long time.
