The diagram illustrates the step-by-step process of producing cheddar cheese from pasteurised milk. Overall, the process has seven main stages , beginning with preparation of milk and ending with the maturation of the cheese. First, fresh or pasteurised milk is mixed with rennet to form the curds. The mixture is then heated in scalding and cut into small pieces. After this, they go through the cheedaring stage , in which they are cut, pilled and flipped cheese curds in blocks. Next, salt is added to the curds before they are placed in molds. The cheese is then pressed into blocks. Finally, the moulded cheese is stored in a controlled environment until they mature.
