The diagram depicts the method of smoking system for producing special flavour of smoked foods. Overall, there are some stages involved in the structure of a home smokery which is constructed underground, starting with intaking of fresh air and culminating in smoking food. In the first stage, by using a chamber, the air goes into the chamber throughout a lid. In the next stage, after going through a narrow connecting pipe, the fresh air moves into the second chamber which is fueled by wooden logs. In this place, compartment is put the lid to stop gas release and increase the amount of smoke. Subsequently, the smoke goes through an upward-sloping pipe and it is transported to the third underground compartment. Then, the smoke moves through some bricks which is put in the bottom of box. Finally, food like fish and meat which are situated above ground level are smoked and the process creates their special flavour and their long shelf life.
