The given diagram provides information about how black tea is manufactured by two distinc methods, namely the traditional method and modern method. Overall, it could be easily seen that both methods have the same start and final stage, beginning with collecting fresh tea leaves and ending with the drying procress. The main difference between two processes is the use of euqipments and machines in each process. Initially , the process start with fresh tea leaves are picked before being withered by a fan in order to reduce the moisture in leaves. Regarding the traditional method, withered leaves are rolled by a roller which released enzymes from leaves. After that, rolled withered leaves are experienced oxidation process, which create a reaction between enzymes and air, make leaves’ change to colour copper before being fired in an oven where approximately 97% of the moisture in the leaves is removed and loose tea is eventually produced. Moving to modern method, instead of being rolled, the leaves are cut into small granules by a cutting machine, which is faster and create smaller granular pieces before undergoing fermentation. They are then fired and dried in an oven or hot-air dryer to remove approximately 97% of the moisture. Finally, the processed tea is packed into tea bags for consumption.
